Describe the style of your restaurant: high-end casual dining, family friendly.


What is your restaurant’s main USP/best feature? We produce interesting & unique specials every week, with a focus on Irish produce wherever possible. Served in a warm & welcoming environment.


Where did you grow up, and how has that shaped you as a restauranteur? I'm from Dundalk originally, but grew up in London. I trained at the Royal Opera House in London, then worked at Sopwell House in St. Albans Hertfordshire before moving to Australia, and later coming home to Ireland, I would take influence from all three culinary cultures


What are the ingredients you couldn’t be without? Butter, salt & fresh herbs


What is your favourite seafood? Halibut is my favourite fish to work with but I enjoy most seafood in general.


What sea louth seafood dishes can be found on your menu currently? This week's Seafood Special is Dunany Crab & Prawn Pappardella, with white wine & parmesan cream & garlic crispy bits.





What is your favourite thing to do/place to go in Louth? Walking around the Cooley Peninsula & Ravensdale. I think they are some of the prettiest spots in the world especially when the sun's out.
